This is a quick, 5-ingredient meal. Delicious, and perfect for busy weeknights. My picture is not the greatest because I spent absolutely no time taking it. But do check out the picture on the original recipe site, it looks nicer than mine 🙂
I didn’t use penne pasta because I found these super fun little curly pastas that I just couldn’t resist. They hold the sauce well with all those little ridges, so they worked really well in this. The basic synopsis is as follows:
- Diced tomatoes (Italian style)
- Cannellini beans
- Feta cheese
Five ingredients! And meatless! (i.e. CHEAP) I made it just as is. I thought about adding salt, but I’m glad I didn’t, because the feta gives it just the right amount of salty punch it needs.
I thought this was good. Basic, but good. JW thought it was okay, but claimed he “doesn’t like beans in his pasta.”
I swear, that boy will be the death of me.
