I’ve had a craving for a homemade, not-too-sweet, nutritious breakfast cereal for a while. I have a granola recipe on file to try, but then this Muesli recipe caught my attention. A no-cook cereal full of amazing healthy ingredients? Sign me up!
Here’s the basic overview: rolled oats, wheat bran, oat bran, wheat germ, raisins, walnuts, pumpkin or sunflower seeds, and a touch of brown sugar. Mix it all up in a bowl.
I mixed it up this morning and it was just what I wanted. I tweaked the recipe a bit, using pumpkin seeds and fewer raisins (that’s why my picture doesn’t look too exciting, not a lot of raisins to boost the color variation), but all in all, I didn’t deviate much. I had it as a cold cereal with vanilla soymilk, and just 1/2 cup of this kept me full to lunchtime.
I’d like to also try it as a hot cereal, like oatmeal. I plan to mash up a banana in it and add cinnamon.
