I finally decided to take the plunge into authentic Mexican cuisine, since all the ingredients are so readily available in Houston. I’ve had tomatillo salsa, and I’ve seen these little guys at several grocery stores, but I’ve never, ever cooked with them.
This morning I roasted the tomatillos in the oven with onions and a poblano pepper. It smelled wonderful, but the real test will be tonight when I put the whole meal together. Depending on how that goes, it could make or break my relationship with tomatillos.
